Quality control steps from raw material to delivery.

The process begins with raw cashew nuts in shell, which are first cleaned to remove foreign materials and impurities. The nuts are then sized according to their dimensions. This classification is essential because different sizes require appropriate roasting conditions, helping achieve more uniform processing in the following stages.

After sizing, the raw cashews are soaked in water to prepare the nuts for roasting and shelling. They are subsequently processed through hot-oil roasting, a key stage designed to extract cashew nut shell liquid (CNSL) and make the shells easier to separate from the kernels. Proper control at this stage helps protect the kernel while facilitating efficient shell removal.

The company's export terms state that its cashew products meet international cashew-kernel standards, including ISO agricultural-product standards, AFI standards and Vietnamese standard TCVN 4850:1998. Exported products can also be inspected by SGS, Vinacontrol or Cafecontrol.
Hai Viet uses vacuumized and sealed packaging to protect finished kernels during storage and transportation. Standard formats include 11.34 kg or 22.68 kg per plastic bag, with cartons used as the outer packaging. The company states that a 20-foot container generally accommodates 700–720 cartons.

The roasted nuts are sized again before entering the shelling stage, where the cashew kernels are separated from the outer shells. The extracted kernels are then dried. Drying serves two important purposes: preparing the kernels for peeling and reducing the risk of insect infestation and fungal growth during subsequent handling and storage.

After drying, kernels are peeled to remove the remaining testa (cashew skin), then sorted by color, breakage level, and size. Hai Viet classifies cashews into 26 grades, including WW180, WW210, WW240, WW320, WW450, LBW240, LBW320, SW240, SW320, DW, WB, WS, LP, SP, and BB. Whole kernels are graded by count per pound, from under 180 kernels/lb (WW180) to about 400–450 kernels/lb (WW450).

After grading, kernels are cleaned again to remove dust and impurities, and fumigated to prevent pests. Products are then packed in vacuum-sealed plastic bags inside cartons, typically 11.34 kg or 22.68 kg per bag. A 20-foot container usually holds 700–720 cartons, and quality can be inspected by SGS, Vinacontrol, or Cafecontrol before export.
