Coffee trees typically take about 3-4 years to start bearing fruit. The harvesting process usually occurs once a year when the coffee cherries turn dark red.
Immediately after harvesting, coffee cherries must be processed quickly to avoid spoilage through fermentation. There are three most common processing methods: Natural/Dry Process: The whole coffee cherries are spread evenly on patios or raised beds under the sun. This process lasts several weeks until the moisture content drops to about 11-12%. Washed/Wet Process: The coffee cherries are pulped to remove the outer skin and most of the mucilage. Then, the coffee beans (still in parchment) are placed in tanks.
For washed and honey process coffee, the coffee beans (still in parchment) must be dried on concrete patios, tarps, or raised beds until the moisture content reaches the standard (about 11-12.5%). In large-scale factories or regions with heavy rainfall, industrial dryers may be used for more precise moisture control.
This is the stage of preparing green beans for export or roasting: Hulling: Removing the parchment layer from washed coffee, or removing the entire dry husk from natural process coffee. Polishing: An optional step to remove any remaining silver skin from the beans. Grading & Sorting: Coffee beans are graded by size (using screen size systems to select beans like S16, S18...), by weight, and defective beans are removed.
