The cherries are thoroughly washed, float-sorted and manually inspected to remove unripe, damaged or defective fruit.

04Coffee Processing and Fermentation

Depending on the required product, the coffee is processed using Natural, Honey, Washed or Ritachi’s proprietary 168-hour Vera anaerobic fermentation method.

05Drying, Milling and Roasting

Processed coffee is carefully dried, hulled, cleaned and graded. Coffee intended for finished products is roasted using hot-air technology with customized roast profiles.
